Bagels with avocado, halloumi and eggs sunny-side up
Recipe serves 4
Preparation time: 45min

Bagels:
100ml milk
100ml water
15g fresh yeast
1 tea spoon sugar
350g spelt flour
30g unsalted butter
10g salt
4 table spoons sesame seeds

3 avocados
2 shallot, chopped
½ peperoncini, finely chopped
1 table spoon lemon juice
2 table spoons olive oil
salt and pepper

500g halloumi cheese
1 table spoon frying oil
8 eggs
2 table spoons butter

For the bagels stir milk, water, yeast and sugar with a whisk. Add spelt flour and butter and knead for 6 minutes into smooth dough. Add salt and knead another 6 minutes. Let rise 1 hour.

Shape 8 balls out of the dough and press flat. Make a small whole in the middle with a wooden spoon and twist each bagel two to three times. Spread on a baking tray covered with baking paper and allow rise again 10 minutes.

Preheat the oven to 200°C (circulating air).

Boil the bagels 1 minute in boiling water and drain them on kitchen paper. Spread bagels on a baking tray covered with baking paper, sprinkle with sesame seeds and bake 15 minutes.

Cut avocado in cubes and mix with all other ingredients. Flavour to taste with salt and pepper. Cut halloumi cheese in slices and fry with oil on the grill. Fry eggs with butter until egg white is almost completely set turn with a spatula and fry the other side another 30 seconds.

Cut bagels in half and spread avocado filling on the lower part. Top with halloumi and fried eggs. Cover up with the upper parts of the bagels.
