Chicken satay with peanut sauce and avocado
Recipe serves 4

Peanut sauce:
1 table spoon peanut oil
3 table spoons shallots, finely chopped
2 cloves of garlic, finely chopped
125g peanuts, chopped
1 tea spoon cayenne pepper
½ tea spoon sugar
salt and pepper
450ml water
100ml coconut milk
4 tea spoons lemon juice

Avocado tatar:
1 avocado
½ mango
10 cherry tomatoes
½ shallot, chopped
2 table spoons olive oil
1 tea spoon lemon juice
salt and pepper

Satay:
3 chicken breasts
8 wooden skewers
salt and pepper

100g mixed lettuce
1 portion vinaigrette

Peanut sauce:
Heat up peanut oil in a pan on medium heat. Shortly brown shallots and garlic. Add peanuts, cayenne pepper and sugar. Season with salt and pepper. Add water and let simmer 20-30 minutes on low heat until the sauce gets smooth. Add coconut milk and let simmer for another 10 minutes. Season with lemon juice and set aside.

Avocado tatar:
Peal avocado and mango and cut into small dices. Cut cherry tomatoes in 4 pieces and add. Add chopped shallot. Mix with olive oil and lemon juice, season with salt and pepper.

Satay:
Cut chicken breasts in strips. Put them onto skewers and season with salt and pepper. Fry them on both sides in in hot olive oil until golden.

Arrange avocado tatar on plates, put lettuce on it drizzle and with vinaigrette. Serve with the satay and the peanut sauce.
