Honeydew cucumber salad with feta cheese, peperoncini and pistachios
Honeydew cucumber salad with feta cheese, peperoncini and pistachios
Recipe serves 4
Preparation time: 15min

½ honeydew
½ cucumber
100g feta cheese
1 green peperoncini

Dressing:
2 table spoons white balsamico vinegar
4 table spoons olive oil
1 table spoon honey
salt and pepper

½ bunch of fresh basil
zest of 1 lime
20 roasted salted pistachios

Peel honeydew and cucumber, remove seeds and cut into thin strips.

Crush feta cheese with a fork. Cut peperoncini in thin slices. Chop pistachios.

Dressing: Mix all ingredients.

Marinate honeydew and cucumber with half of the dressing and place on plates. Top with feta cheese, peperoncini, basil leaves, lime zest and chopped pistachios. Sprinkle with the leftover dressing.
